Our Story

Owned and run by the Hemmes family for over 60 years, Merivale began as a fashion house that led Sydney into the swinging sixties for all things music and fashion. With a knack for creativity, “The House of Merivale” injected a new energy into the theatre of Sydney transforming the brand into what we know now as one of the largest leading hospitality empires in Australia. 

Remaining true to our heritage, our aim is to bring a little magic into the everyday. We are constantly growing and pushing the boundaries in over 90+ venues to encapsulate a unique and best-in-class experience no matter where you go. Each space is carefully executed with the same attention to detail across a seemingly endless supply of inspired concepts, restaurants, bars, cafes, pubs, nightlife, and retail.

 

The Venues

Merivale’s pizzas are a key part of the experience across several flagship venues, including Club Rose Bay & Notti’s, Zetta at Allianz Stadium and the SCG, and The Coogee Pavilion.

These kitchens operate at scale while maintaining a strong restaurant mindset — producing high-quality pizzas using wood-fired ovens, fresh ingredients and hand-stretched doughs in fast-paced, high-volume environments. Whether it’s beachside service, stadium trade or event-driven peaks, these venues demand consistency, skill and pace.

The Roles

We are currently looking for both casual and full-time  Pizza Chefs at various levels to join our teams across the following locations:

  • Pizza Chefs – Club Rose Bay, Full-time and casual
  • Pizza Chefs – Zetta (Allianz Stadium & SCG) – casual
  • Pizza Chefs – The Coogee Pavilion, Full-time and casual

 

These roles suit chefs who take pride in technique, enjoy working with fire and dough, and thrive in energetic, service-driven kitchens.

If you have the following experience, we want to hear from you!

 

  • 1–2+ years’ experience as a pizza chef or pizza cook
  •  Confident hand-stretching dough, topping and cooking pizzas
  • Experience working with wood-fired ovens
  • Ability to top and cook pizzas with speed, consistency and care
  • Strong communication skills and a genuine team-first attitude
  • Professional, reliable and detail-oriented
  • Comfortable working in high-volume and alfresco kitchen environment
