The former George Patterson house retains much of its history; flanked by lines of magnificent iron columns with a 42 metre-long marble bar centrepiece entrance that welcomes your journey, its here the city’s best chefs and bar experts present a sumptuous playground for food and drinks. With 6 bar offerings ranging from a garden-style patio, to a high-end intimate lounge providing bottle service, to an underground 1920s style classic cocktail bar voted in Sydney’s top 50 bars, to one of Sydney’s oldest watering holes turned into a New York-style loft tucked in an alleyway as you follow the cobblestone road.


The Role

We are calling for a passionate and experienced Bar Managers to lead our teams at Hemmesphere and Palmer & Co! Our Bar teams are all about creating an unforgettable guest experiences and always striving to be the best at what we do. Merivale are after stand-out Bar Managers with experience in high-volume, premium environments. This role will suit a passionate and experienced beverage driven professional, who truly understands what being hands-on means! 


Reporting directly to the General Manager, you will be leading from the front and setting standards high, managing each bar from end, ensuring a smooth operation of all moving parts across the venue.  As a Bar Manager you are the backbone to our business and It's your job to ensure that you maintain the highest level or service, most importantly every one of our customers receives an experience that'll leave them yearning for more.


Your focus will be around:

  • Stock control, variances, beverage COGS at target %
  • Exceptional product knowledge and ability to drive consistency
  • Service standards, team culture and client relationships
  • Curation of new and exciting, cocktail and wine offerings
  • Ongoing maintenance of all beverage offerings and their delivery in venue
  • Finding growth opportunities, activation and delivery
  • Bar maintenance, cleanliness, organisation and presentation


These venues are all about execution of excellence and creating an unforgettable guest experience. To really succeed in this role, you will have:

  • Exposure to managing large teams in a high-volume bars
  • Minimum of 3+ years in a Bar Management position
  • Commercial and operational awareness
  • High knowledge and experience around creation and selection of cocktail, wine and beer
  • Experience driving high standards through people
  • Previous ownership around recruitment, training and development of team
  • Influencing, coaching and presentation skills
  • Strong focus on delivering high standards and exceptional product
  • Accountability for aspects of your venue's P&L
