Located within the Establishment precinct behind the huge marble bar is one of the few authentic sushi bars in Sydney and enjoys a dedicated following of sushi fans around the world. Watch the chefs at Sushi e use a medley of modern and age-old techniques as they pare each dish in front of you, precisely serving the highest quality fresh fish, and seafood. The adjoining the chic cocktail lounge Hemmesphere on Establishment's fourth floor is the perfect spot for a pre (or even post) dinner aperitif.


The Role

We are looking for a passionate and dedicated Sushi Chef with experience working in high end or hatted restaurants. This is a rare opportunity to join this small and supportive team who consistently deliver fresh Japanese cuisine with a focus on sushi and sashimi. The marble topped sushi bar is the perfect platform to hone your service and communication skills whilst showing off excellent produce from the cutting board direct to the diner. The open kitchen is the perfect platform to put your skills on show and experience service like no other.

To be considered for this position you will need to demonstrate the following:

  • 2+ years’ experience in hatted or fine dining restaurants
  • Good communication and organisation abilities
  • Excellent knife skills
  • Work efficiently in a clean and organised manner
  • Well presented, professional and good hygiene practises
  • Can manage a section and MEP
  • Experience working with raw fish, rolling sushi, and preparing sashimi
