The Venue  

 

Come by for an Italian drop, or a cocktail, and Mike Eggert’s menu of simple, delicious food. There are plenty of house-made antipasti to choose from, including sardines, kingfish crudo, marinated peppers and burrata, and grilled snacks like king prawns with chilli and fennel and haloumi with beetroot, as well as Totti’s signature bread, wood-fired to order.  

 

The Role 

 

We are looking for full time CDP's, Jr. Sous Chefs, and Sous Chefs to join the kitchen team at Bar Totti’s in the CBD and Totti's Rozelle. If you have a passion for great Italian food and love the buzz of a fast-paced restaurant, this could be your role. We are looking for someone with the following experience and attributes: 

  • At least 2 years of experience in a similar role in a high-end wine bar, restaurant or brasserie 
  • Well presented, professional and calm under pressure 
  • Good work ethic, attitude and communication. 
  • Able to manage a section and train junior chefs.
  • Experience with suppliers, managing costs, understanding P&Ls as a Sous Chef.
  • Knowledge of Italian cuisine and using a wood-fired oven is a bonus.
