Owned and run by the Hemmes family for over 60 years and remaining true to our heritage, our aim is to bring a little magic into the everyday.

We are constantly growing and pushing the boundaries in over 80+ venues to encapsulate a unique dining experience no matter where you go. Each space is carefully executed with the same attention to detail across a seemingly endless supply of inspired concepts, hatted restaurants, hotels, pubs, nightlife and retail giving the opportunity no matter what background you specialise in.


The Opportunities

Merivale is on an exciting journey and the company is growing with New Venues coming online at the end of the year.

We are on the lookout for experienced pastry chefs to join our venues across Sydney, which include Coogee Pavilion, Uccello and 2 new venues in the CBD and Rozelle. This could be your opportunity to step up in your career and start to learn management skills.


  • A passion for all thing’s pastry related and enjoy working in a fun and casual environment
  • Have the pastry knowledge to execute all prep and manage a service autonomously
  • Experience in bistro’s, restaurants or patisseries
  • Experience in a high-volume kitchen, good organisation and attention to detail
  • Train junior chefs and develop your management skills
