Owned and run by the Hemmes family for over 60 years, Merivale began as a fashion house that capitulated Sydney into the swinging-sixties for all things music and fashion. With a knack for creativity, “The House of Merivale” injected a new energy into the theatre of Sydney transforming the brand to what we know now as one of the largest leading hospitality empires in Australia.

The Role
Merivale is in search of an experienced Head of Wine to join our senior group beverage team.  

Reporting directly to Dorianne Neimard you will be responsible for the effective management of beverage across a portfolio of venues.

You will inspire, lead, and mentor a team of over high performing Sommeliers. You will also collaborate with the Restaurant Management team delivering exceptional guest service we well as driving revenue and cost results.

 

The successful candidate will have the opportunity to work closely with the Group General Manager – Beverage, Franck Moreau MS.

 

The ideal candidate will have a proven track record in quickly identifying the gap in management practices (people, process, systems) across multiple product lines, developing and executing effective strategy and plans with tangible results to demonstrate in venue.

 

This is a critical role with Merivale’s sommelier group, you’ll set the standard for world-class service and share your wine knowledge with esteemed guests to ensure their experience at Merivale is one they’ll never forget. 

 

Key focuses will include:

 

  • Execution of strategy
  • Manager product performance with a guest focus
  • Deliver operational excellence in venue
  • Manage product performance with guest focus
  • Execute effective revenue generation activities
  • Attract and lead beverage team including sourcing, recruiting and induction
  • Establish and drive collaboration and culture within team
  • Responsible for financial management of sales budgets in collaboration with finance team and Group Beverage Manager
