Head Sommelier | Mr Wong

The Venue

Mr. Wong does Cantonese-style food in a larger than life way. Spread over two levels of the establishment building and serving up a selection of up to 80 dishes, it’s a big affair. Yet somehow the restaurant still manages to feel intimate, with nooks for two, dim lighting and moody jazz.

At night, executive chef Dan Hong’s roast duck and XO pippies rule, but lunch is all about Michael Luo’s exquisitely fashioned, best-in-show dim sum.

 

The venue also houses one of Australia’s most respected and extensive beverage lists including a wine list comprising of 1200+ labels.

The Role

In this role you’ll be given the opportunity to use your creativity, introduce new and unique offerings to the wine list and take charge of the wine program for one of Merivale’s most treasured venues.

 

Working closely with the Group General Manager – Beverage, Franck Moreau MS and Head of Wine Dorianne Neirmard.  In the restaurant you will inspire, lead, and mentor a team of over 8 high performing Sommeliers.

You will also collaborate with the Restaurant Management team delivering exceptional guest service we well as driving revenue and cost results.

 

This is a critical role with Merivale’s sommelier group, you’ll set the standard for world-class service and share your wine knowledge with esteemed guests to ensure their experience at Mr Wong is one they’ll never forget.

 

To be successful in the role, you will have:

  • Previous Head Sommelier experience within a similar high-end restaurant environment
  • Enjoy working with extensive wine lists
  • Be an inspirational leader with a proven track record of developing and mentoring the other Sommeliers within your team
  • Have a thirst for knowledge and growth
  • A passion for providing the customer with an outstanding experience.
