The Venue
Uccello takes its cues from the Italian coastline. With a menu that makes the most of the restaurant’s wood-fired oven and charcoal barbecue and is inspired by the traditional recipes and techniques of regional Italy.
At the heart of our cooking is an appreciation of provenance and a commitment to extracting every drop of flavour out of an ingredient. Working closely with local farmers and producers to deliver a restrained and humble menu, where produce is the hero of the dish.
The Role
We are looking for a head chef who strive for excellence and knows what it means to make sure every experience for a guest is exceptional. You will be working closely with the Exec Chef of the Ivy Precinct, to collaborate on menu development and have full accountability of financials, the kitchen team and product consistency.
You will be joining a team that is dedicated and passionate, with focus on producing food that is honest, creative and seasonal. You will work closely with suppliers to get the best produce and create flavoursome and familiar dishes. If you are positive, driven and have a passion and knowledge for Italian cuisine and cooking techniques. We are looking for someone that has good product knowledge, can lead from the front and grow and develop their team.
Responsibilities:

Responsible for the execution of effective stock management including but not limited to; ordering, receipting, storing and stock rotation.

Responsible for effective people practices including, but not limited to; recruitment, onboarding, performance management.

Responsible for delivering on trend, relevant, seasonal food offering from the kitchen.

Accountable for sourcing growth opportunities, activation and delivery.

Accountable for adhering to Merivale procedures around Food Safety, including allergen training and food poisoning allegations.

Accountable for effective financial management ensuring costs (good and labour) are managed and sales budgets and profit expectations are met.

Responsible for enhancing and enabling positive kitchen culture.
