The Venue 

With magnificent columns lining the walls and a 42-metre-long marble bar as its centrepiece, Establishment Bar and Restaurant exudes style and sophistication. This historic venue is an Australian icon, and a unique place to enjoy a drink. Our menu has everything from traditional Thai to classic Aussie pub food, such as fish and chips and our take on chicken schnitzel. Eat in the bar area or go out the back to Establishment Garden, where you can also grab a one of our seasonal cocktails.

Being in the Sydney CBD, our corporate clientele are time sensitive - particularly for lunch - so these service periods are fast paced and very busy. If you come in on any weekday lunch you will see us in full flight and experience the buzz and energy that our chefs and regular guests love.

The Role

This is a great opportunity to join the well-established team at Establishment Main Bar. We are looking for a leader that can bring their maturity and management experience to the Head Chef position. This role does not come up very often and is suited for someone looking for longevity in their next head chef role. You will work closely and collaboratively with the exec chef Dan Hong on menu development and the food direction. You will learn the fundaments of working at Merivale and what it takes to be successful in one of our busiest venues.

You will be responsible for menu creation, developing, driving, and inspiring a team of 15+ chefs. We are looking for someone that has experience in a high-volume, fast-paced restaurant or pub that can deliver a consistent product across a diverse menu, offering classic dishes and Thai food. 

The successful chef will have solid management experience working in a head chef role for a minimum of 3+ years. The position involves working collaboratively with other key members of the restaurant team, confident working at a senior level while still being hands on in the kitchen. You will be accountable for the kitchen financial results, including food and labour costs and forecasting targets.
