Owned and run by the Hemmes family for over 60 years, Merivale began as a fashion house that capitulated Sydney into the swinging-sixties for all things music and fashion. With a knack for creativity, “The House of Merivale” injected a new energy into the theatre of Sydney transforming the brand to what we know now as one of the largest leading hospitality empires in Australia.  

 

Along with the Lorne Hotel, Merivale has recently made a significant move into Melbourne's hospitality scene, starting with the October 2025 opening of LB's Record Bar on Meyers Place, a vinyl-focused agave cocktail bar led by renowned Melbourne bar figures Zara and Michael Madrusan. Merivale has also acquired several key CBD properties, including Tomasetti House and an eight-storey car park in Melbourne's CBD, set to be transformed into a major entertainment hub featuring restaurants, cafes, bars, a hotel, retail spaces. 

 

The Role

We are seeking a dynamic and strategic Group Operations Manager to lead operational excellence across our Victorian venues and drive profitability, growth, and innovation. This is a pivotal leadership role within Merivale, responsible for delivering exceptional guest experiences, operational standards, and aligning venue teams to our brand vision.

 

As a key member of the Group Operations Team, you will:

 

  • Lead Strategy & Growth: Drive group profitability and growth through collaboration with venue senior teams and cross-functional HQ departments.
  • Elevate Guest Experience: Ensure operational standards and brand identity are consistently upheld across all venues.
  • Champion Innovation: Develop and execute strategies that foster creativity, product evolution, and continuous improvement.
  • Develop Talent: Identify, attract, and grow top talent, creating succession plans and accelerating career pathways.
  • Financial Leadership: Deliver group budget, including revenue, EBITDA, Labour, and OPEX results.
  • Ensure Compliance: Maintain safety, licensing, and adherence to all company policies and legislative requirements.
  • Property & Asset Management: Partner with facilities and styling teams to uphold venue presentation and manage CAPEX effectively.
