Bar Totti’s is where Sydney comes for everything that feels good — a glass of Italian vino, a classic cocktail, and Mike Eggert’s menu of simple, timeless, outrageously delicious food.

From house-made antipasti and scallop crudo to grilled prawns, honey + rosemary wings and the famous wood-fired Totti’s bread, every dish is driven by premium produce and precise technique.

Now we’re looking for a Chef de Partie to join the team and help deliver the magic, day after day.

The Role

  • Run your section with confidence and consistency in one of Sydney’s most iconic Italian dining rooms
  • Cook with premium produce, a wood-fired oven and a fully kitted-out modern kitchen
  • Work closely with a skilled brigade and grow under Exec Chef Mike Eggert
  • Be part of a fast, fun, high-standard service where quality never slips

What You’ll Bring

  • Experience in a high-end wine bar, restaurant or brasserie
  • Calm, professional presence in an open kitchen
  • Strong organisation and attention to detail — you care about doing things properly
  • A genuine passion for Italian flavours, produce and technique
  • Positive communication, work ethic and the ability to support those around you
  • Wood-fire experience is a bonus but not essential
