The Overview

We’re proud to have some of the best chefs in the country work for us, and with this kind of talent in the kitchen, we’ve got the unique opportunity to pass on these skills and knowledge to the next generation of future chefs.


Legendary chef Peter Doyle heads up the Merivale Apprenticeship program, helping to develop the next generation of professional chefs. With a blend of classroom, online and on-the-job training, this accelerated program will provide an unrivalled launch pad for those beginning their career journey and will no doubt help shape some big names in food in the future.


The Program 

The Merivale Apprenticeship program is an all-expenses paid program that is run in association with Allara Learning. The course, which usually takes up to 36 months with other institutions, will be taught in 18 months followed by 3 years in Merivale kitchens.


We’ll cover the nitty-gritty of the industry, balancing theory, practical and on the job experience. Like everything Merivale, we will bring the experts and best in the business to educate our apprentices in different cuisines and techniques. The program will provide:


  • Hands-on training in commercial kitchens
  • Learning how to prepare and cook dishes within industry timeframes
  • The knowledge to safely satisfy the dietary requirements of customers
  • Crucial food hygiene and WHS principles, practices, and regulations
  • Engaging and 1:1 attention to apprentices from Peter Doyle
  • Learning in classic and modern cooking techniques
  • An industry recognised trade qualification


Being an apprentice is all about learning, so most importantly we’re looking for a great attitude, a "can do" approach and a keen interest in food. We want you to be a passionate, inquisitive, honest and a team player, someone that is ready to learn and build their career with Merivale.


This will be no easy feat, being a chef means late nights, early mornings and working on weekends. The reward will be bringing your culinary dream alive and setting you up with a solid career path into the future.

The Return

You will walk away from the program as a fully qualified chef, with a Certificate III in Commercial Cookery.

Eligibility Requirements

To be considered for the Apprenticeship Program, you need to be 16 years old or over, no longer at school, living or working in NSW, an Australian permanent resident, humanitarian visa holder, or New Zealand resident.
