The Head of roles at Merivale are key to the success of our biggest precincts, these include the likes of Coogee Pavilion, The ivy, The Newport and Establishment. All of these precincts have multiple outlets and venues on offer, from the bustling bars and pubs to the casual and premium dining restaurants. The Role
Working closely with venue, bar, restaurant, and cellar managers the Head of Department roles are responsible for driving product, people, guest experience and business growth across multiple dining or beverage locations with a precinct.
The role works alongside key stake holders in the group including Executive Chefs, Senior Beverage Team and Group Operation Managers, to be successful you will need to proactively build and maintain strong relationship across the Merivale group and precinct.
Our head of roles work across restaurants, bars and beverage and have the following responsibilities:
- Development and execution through key stakeholders to ensure alignment to venue and guest identity.
- Accountable for driving guest engagement and recognition including VIPs and regular guests. Responsible for driving VIP service expectations.
- Responsible for team Precinct Training Planning.
- Responsible for driving the improvement in existing and underperforming areas relating to customer experience.
- Responsible for driving commercial growth through service and people – establishing and cascading clear annual and quarterly plans in collaboration Senior Leadership Teams.’
- Accountable for key talent and effective FOH people practices including, but not limited to; recruitment, onboarding, driving employee performance, in venue training, experience, and offboarding.
- 3-5 years experience in a comparable role within the hospitality industry, managing multiple venues with F&B focus.
- Responsible for building strong relationships within venue operations and SMT teams, driving collaboration across venues and portfolios.
- Accountable for establishing and driving a collaborative and passionate culture within the teams with a focus on achievement of business priorities and product innovation.
- Responsible for day-to-day operations of the business including but not limited to; venue performance, presentation and cleanliness.
- Accountable for leading revenue generation activities resulting in financial growth.
- Responsible for effective financial management ensuring costs (COGS, Labour, CWD, stocktakes) are managed and sales budgets and profit expectations are met.
- Responsible for supporting the Senior Beverage Team with evaluating and cultivating supplier relations, compliance of supplier contractual agreements, product acquisition and brand partnerships.
