The Venue

Nestled amongst idyllic gardens and incorporating various outdoor dining spaces and bars, the sprawling grounds of The Newport lead you to a staircase entrance of an exclusive oasis, with panoramic views overlooking the blue waters of Sydney’s Northern beaches.

 

Bert’s is a bar and brasserie reminiscent of the grand hotel dining rooms of the 1930s. Executive chef Jordan Tofts coastal European menu has something for every occasion.  Start at the Oyster Bar with your choice of caviar, dressed crab or crudo. For mains select live lobster from the tank, or whole fish, beef, poultry or pork that’s either roasted in the charcoal oven or over the Basque grills. To accompany your meal, We have an extensive wine list curated by group sommelier Franck Moreau MS, and a cocktail list with our take on the classics.

 

And… If you’re in the mood, the champagne bar is the perfect place to stop by before or after dining.

 

The Role

Our Bar teams are all about creating an unforgettable guest experiences and always striving to be the best at what we do. Merivale are after a stand-out Bar Manager who is a strong leader with experience in a fine dining, high-volume environment. This role will suit a passionate and experienced beverage driven professional, who truly understands what being hands-on means!

Reporting directly to the Venue Manager, you will be leading from the front and setting standards high, managing the bar from end to end, ensuring a smooth operation of all moving parts across the venue.  As a Bar Manager you are the backbone to our business and It's your job to ensure that you maintain the highest level or service, most importantly every one of our customers receives an experience that'll leave them yearning for more.

 

Your focus will be around:

  • Service standards, team culture and customer relationships
  • Stock control, variances, beverage COGS at target %
  • Compliance and stocktakes
  • Developing, teaching and coaching bar team around skills and product knowledge
  • Ongoing maintenance of all beverage offerings and their delivery in venue
  • Delivery of on trend, relevant and seasonal cocktail offerings
  • Finding growth opportunities, activation and delivery
  • Bar maintenance, cleanliness, organisation and presentation

 

Our venue has been drawing locals since the 1880’s so its important to keep standards high when it comes to continuing the magic. To really succeed in this role, you will have:

  • Exposure to managing large teams in a high-end/premium environment 
  • Minimum of 3+ years in a Bar Management position
  • Strong stakeholder management skills
  • Commercial and operational awareness
  • Experience driving high standards through people
  • Strong focus on delivering high standards and exceptional product
  • Accountability for aspects of your venue's P&L
  • Business and operational acumen
