General Manager | Coogee Pavilion

Merivale, owned by the Hemmes family, has been established in Australia for over 60 years.  Owning a growing portfolio of more than 80+ restaurants, bars, pubs, hotels, and function spaces in Sydney, including one of our top, multi-site venues, the Coogee Pavilion, where we are in search of an exceptional General Manager to join us.  


The Venue


Coogee Pavilion is an iconic destination, consisting of multiple offerings spread across three levels within the precinct which can cater to up to six thousand guests throughout any one day.  

The Ground Floor offers casual dining, wood-fired pizza, coffee, and Gelato, large kids play area, and a beachside bar with sports, gaming, and DJ entertainment.  


The middle floor of the Coogee Pavilion is home to mimi’s, our fine dining restaurant with a Mediterranean soul; will’s, a cocktail bar with a view of the beach; and Una Mas, serving flavourful tapas fresh off the planche.  


While upstairs, Coogee Pavilion Rooftop, with four indoor and outdoor bars and a huge wrap-around balcony, has become Sydney's destination of choice for music, drinks, and dancing, having hosted some of the best local and international acts.  


Operating seven days across breakfast through until late night, Coogee Pavilion employs up to seven hundred staff during peak season, consisting of casual and full-time waiters, sommeliers, bar staff, gaming, cellar, and management teams across each venue within the precinct. 



The Role


We are seeking an experienced General Manager who can oversee the whole operations of the venue across all levels at the Coogee Pavilion.  You will be the face of this premium outlet and drive an exceptional guest experience across the venue.  


This rare opportunity will see you working in one of our largest venues which welcomes thousands of guests through the doors in Summer, and you’ll be working with Executive Chefs like Jordan Toft! 


Reporting to the Group Operations Manager, you will be responsible for:  

  • Delivery of the venue budget, objectives, and deliverables;   

  • Drive agreed financial focuses with the team, and cascade consistent messages and targets;  

  • Deliver quality guest experience and service through food, beverages, gaming, operations, and ambiance;  

  • Drive innovation in venue (group) direction and product development;  

  • Exhibit and maintain an elite level of leadership across all areas of the business;  

  • Drive cohesion and performance between the venue team and other business stakeholders to deliver results;  

  • Support, develop and drive asset protection and risk mitigation strategies including but not limited to food safety, licensing and regulatory compliance;  

  • Recruit, induct and retain key talent;   

  • Partner effectively with key community stakeholders. 


Who Are You


You will be a passionate and driven leader and one who can adapt to varied service styles, clientele, and offerings in one location.  


To be successful in this role you will: 

  • Have previously worked within a similar role within a large scale or multi-site venue, and understand complex environments. 

  • A hospitality background with knowledge across Work Health & Safety, and Regulatory Compliance is highly advantageous; 

  • Be a commercially astute people manager, with demonstrated experience in your field; 

  • Have exceptional financial acumen; 

  • Bring ideas and initiative to the table and drive growth in your venue; 

  • Be truly passionate about leading and developing a team, and well connected to your industry.
