Sous Chef | Totti's Bondi
The Venue
Headed up by Mike Eggert, Totti’s is all about enjoying simple, delicious food with your favourite people.
The menu is made for sharing and is suited to all ages. Start with wood-fired bread made to order with small plates of local and house-made antipasto. Move on to flavour-packed pasta from Eggert, and then perhaps the chicken or fish, perfectly cooked in the Josper charcoal oven. And always leave room for dessert – tiramisu, sorbet and a Neopolitan ice-cream sandwich will take you back to the flavours of your childhood, but better. Drinks are kept simple too, with retro-Italian-inspired crowd pleasers (spritz anyone?) and organic wines, with a focus on small boutique wineries.
Take a seat in the light-filled indoor space or in the courtyard amongst the olive trees and soak up the fun, flavour and relaxed vibes at Totti’s.
The Role
We are looking for a driven and knowledgeable Sous Chef to join the fun and passionate team at Totti’s Bondi, you will be working alongside the Head Chef to help manage, lead and inspire a team of 20+ chefs.
You will have:
- 3 - 4 years’ experience in a similar role in casual high volume dining restaurants.
- Good knowledge of different cooking techniques and an understanding of Italian cuisine is a bonus.
- Someone who can hold their own in a busy service while staying professional and guiding chefs.
- Good communication, organisation and technical skills.
- Confident in leading the kitchen, adapting to situations and working across any section when required.
- Be creative and have a passion for good food and driving a team.
- Experience in COGS, P&L’s and kitchen admin.
