We are currently seeking an experience Sommielier to join our team at Totti's.


The Venue

Your local Italian that’s all about sharing good food, a few laughs and a drink or two with family and friends. Headed up by Mike Eggert, Totti’s menu is made for sharing. Start with wood-fired bread made to order with small plates of local and house-made antipasto. Move on to flavour-packed pasta, and then perhaps the chicken or fish, perfectly cooked in the Josper charcoal oven. And always leave room for dessert – tiramisu, sorbet and a Neapolitan ice-cream sandwich will take you back to the flavours of your childhood, but better.


A light filled indoor space with a courtyard amongst olive trees, you will feel as though you are in the region of Southern Italy.


The Role

We are searching for a Sommelier to join our team at Tottis! This is truly a unique opportunity for passionate Sommelier’s who are wishing to broaden their knowledge of not only wines, but systems and service styles as well.


You will be a team player, teach and share your wine knowledge, and inspire your team to deliver exceptional service to every guest. Being such a critical role with Merivales sommelier group, you’ll set the standard for service and share your knowledge with esteemed guests to ensure their experience at Tottis is one they will never forget.


To be successful in this role you will have:

  • 2-3 years experience in a similar role
  • an understanding of new and old world wines as well as modern trends in natural wine.
  • a wine qualification would be highly regarded however isnt essential if you have on the job exerience
  • experience developing wine lists, moving with seasonal changes
  • be able to train staff of all levels
  • have a good understanding of the BOH processes for stock takes and new beverage item creation
  • be passionate about what you do, and who we are.
