The Role

Fred's offers a high-quality, produce-led, seasonal menu that changes often. We are searching for an incredible Sous Chef who lives for simple food, created with the best quality ingredients sourced regionally.

Working closely with the Head Chef and a small, talented brigade, you will play an important role in the day-to-day running of the kitchen, leading service, supporting the team and maintaining the high standards that Fred’s is known for.

Everything is handmade in this kitchen, using intricate techniques and the very best produce. We are looking for an intuitive and technically strong chef who is ready to take the next step in their career, with strong communication, organisation and leadership skills. With an open kitchen and regular guest interaction, confidence and a genuine passion for hospitality are essential.

To be successful in this role you will:

• Have at least 5 years’ experience in a high-end restaurant or wine bar, with experience at Sous Chef level or ready to step up.
• Be confident cooking proteins, running a section and leading a service.
• Have strong knowledge of produce, seasonality and high-end cooking techniques.
• Be confident leading and mentoring a small team of chefs.
• Be organised, calm under pressure and able to maintain high standards throughout service.
• Be comfortable working in an open kitchen and engaging with guests.
• Have excellent communication skills and a genuine passion for hospitality.
• Be keen to continue developing your skills and contribute to the ongoing evolution of the menu.
