Junior Sous Chef | Totti's Rozelle

The Venue

 Set within the iconic Three Weeds pub, you’ll find Totti’s – a casual Italian eatery with a focus on simple, delicious food, best enjoyed shared. Exec chef Mike Eggert’s menu features all the signatures – including Totti’s famous wood-fired bread and antipasti, handmade pastas (Mike’s known for his specials), and chicken and fish dishes cooked in a Josper charcoal oven. Save room for sweets, with a dessert bar serving up traditional gelati, sundaes and Italian classics like tiramisu and panna cotta. 

 

The Role

We are looking for a driven and knowledgeable Sous Chef to join the fun and passionate team, you will be working alongside the Head Chef to help manage, lead and inspire a team of 20+ chefs. 

You will have: 

  • 2-3 years’ experience in a similar role in casual dining restaurants.
  • Good knowledge of different cooking techniques and an understanding of Italian cuisine is a bonus.
  • Someone who can hold their own in a busy service while staying professional and guiding chefs.
  • Good communication, organisation, and technical skills.
  • Confident in leading the kitchen, adapting to situations, and working across any section when required.
  • Be creative and have a passion for good food and driving a team.
  • Experience in COGS, P&L’s, and kitchen admin.
